"The red wine 'Korafi' from Tenuta Corallo reflects the authentic Primitivo, with a strong and distinctive personality, a wine of great fullness and body, it delights the nose with notes of ripe red fruits combined with tertiary notes from long ageing in wood. Primitivo is one of the most famous grape varieties of Puglia, but not everyone knows that it has a strong affinity with the Zinfandel grape of California, which has been confirmed by DNA tests and extensive historical research. In fact, Zinfandel arrived in the United States from Europe (where it is known in Italy as Primitivo) in the early 19th century, spreading with great success to the Napa and Sonoma wine regions. The Primitivo vines grow on deep, clayey-sandy soils without skeletons and are trained using the spurred cordon system, which guarantees a yield of 80/90 quintals of grapes per hectare at harvest. The harvest takes place at the end of August, when the grapes are perfectly ripe. Vinification takes place in steel vats, with maceration on the skins for 8-10 days at a controlled temperature of 26-27°C. The wine is then aged in oak barrels for 16 months. In the glass, Korafi has a ruby red colour with garnet reflections. The nose is dominated by intense notes of ripe red fruit, with a predominance of cherry, followed by spicy notes of pepper and vanilla, balsamic accents of eucalyptus and aniseed, and hints of leather and tobacco. The palate is rich, dense and full-bodied, with ripe and balanced tannins that give the wine a long finish. "Korafi" reaches its maximum expression when paired with second courses, ideal with structured red meat and game dishes, grilled or stewed. Accompanied with tasty sauces or onion or pumpkin preserves, this wine stands out for its versatility and gastronomic complexity.
