The Notte di San Giovanni red wine from Cascina Belmonte is a tribute to the shortest night of the year, magical and celebrated in the music of Giovanni Lindo Ferretti, the famous Italian singer-songwriter. This fine red wine is intended for important evenings and when we want to highlight an event or give due importance to a gesture. Associated with chilly evenings, open fires, country houses and eagerly awaited appointments, this wine evokes an intimate and cosy atmosphere. A wine of substance, warm, structured, with intense ripe red fruit, elegantly combined with balsamic notes that give freshness. Made from the union of two indigenous Italian vines, Rebo and Marzemino, accompanied by the international Merlot, selected grapes of the highest quality, coming from the company's oldest vineyards, harvested in boxes and left to dry for a short period of 30 days, also in boxes. Vinification takes place in steel tanks, the must remains in contact with the skins during fermentation for about 40 days, with periodic pumping over. Ageing takes place in partly new oak barrels for 1 year. This is a vegetarian wine, produced without the use of animal proteins in the clarification process, and has a low sulphur dioxide content. The colour is ripe garnet red, lively and brilliant, suggesting a warm and enveloping structure. The bouquet is intense and persistent, recalling the ripe fruitiness of dark cherries soaked in alcohol, sweet plums, caramel, red fruits in spirits, a sweet spicy note of vanilla and the freshness of eucalyptus. In the mouth, the softness and warmth of the alcohol bring back the afternoons of that hot year, with a persistent and soft character that pleasantly involves the taste and smell, balanced acid-tannic. "Notte di San Giovanni" goes well with long cooked dishes, red meat, game, braised and stewed meats. It is also perfect with mature cheeses with character such as Parmigiano Reggiano vacche rosse or Pecorino di Fossa.
