Description

This wine is the result of a careful manual selection of the grapes during the harvest, grown on a medium-textured clay soil. The production process is carried out with great attention to detail: after destemming, the must is transferred with the skins to steel vats, where fermentation takes place with indigenous yeasts at a controlled temperature. The maceration is short, about 5 days, in order to obtain a fresh and fruity product. Malolactic fermentation always takes place in steel, giving the wine personality and greater roundness. "Evoli" has a ruby red colour, tending towards violet, and an intense bouquet of sour cherry, plum and spicy notes of ripe pepper. With an ethereal, warm and fresh alcohol, the wine conquers the palate with an enveloping smoothness and clear tannins, accompanied by a return of spicy and fruity notes, with a pleasant orange note at the end. This wine is the ideal accompaniment to Mediterranean cuisine, perfect with parmesan cheese, pasta, meat and especially lamb.
