Giasira's Sic is a Brut Metodo Classico sparkling wine with the scent of Sicily, made with Nerello Mascalese grapes, an indigenous Sicilian grape variety, and vinified in the heart of south-eastern Sicily. This famous variety of black berries produces a seductive and well-balanced rosé sparkling wine for all occasions, with a lively sparkle and a fruity taste, accompanied by just the right amount of acidity that invites you to take another sip. The vines, cultivated with dedication on the estate, among ancient olive, carob, almond and citrus trees, rest on limestone soils, cradled by the Mediterranean climate of sunshine and sea breezes, producing fruit of exceptional quality. The espalier system with Guyot pruning and a planting density of 5,000 vines per hectare ensure controlled production. Harvesting is done by hand in the first half of September, when the grapes have the right acidity for sparkling wine. The vinification process begins with a soft pressing of the grapes and the must obtained undergoes a short maceration on the skins for a few hours. The first fermentation takes place in temperature-controlled steel tanks. The following spring, the wine is racked, i.e. bottled, and undergoes a second fermentation in the bottle, which gives it its characteristic effervescence. The Sic sparkling wine remains on its lees in the bottle for about 24 months, giving the wine an elegant antique pink colour with onion skin reflections. On the palate, the fine and persistent pérlage provides the right vibrations, while the enveloping aromas of wild strawberry and dog rose are in perfect balance with the delicate notes of red fruits. In the mouth, the wine is velvety, with a pronounced acidity that guarantees persistence in the finish. Perfect throughout a meal, it is the perfect accompaniment to seafood crudités, carpaccio, fish tartar or delicious shellfish.
