The Giasira white wine from the winery of the same name is a harmonious blend of Moscato bianco and Chardonnay grapes, the result of a perfect balance between these two noble varieties. The former is an aromatic grape variety that is widespread throughout Italy and whose name derives from "muscum", meaning musk, whose characteristic aroma can be found in the grapes; the latter needs no introduction, Chardonnay is one of the most widely cultivated international grape varieties in the world. Giasira is a fresh wine with an enchanting bouquet and excellent acidity, making it extremely versatile and exceptionally drinkable. It is excellent as an aperitif and with light starters or simple dishes. The vineyard is located in the evocative area of south-east Sicily, in the municipality of Rosolini, more precisely in the Contrada Ritillini, where the soil is calcareous and the climate is Mediterranean, with significant temperature variations between day and night. The vineyards, which are situated between 180 and 250 metres above sea level, are pruned using the spurred cordon system, which gives an average yield of around 70 quintals of grapes per hectare, in order to ensure good production without compromising quality and uniform ripening of the grapes. Harvesting is carried out carefully by hand, starting in the first ten days of August for Chardonnay and Muscat, to ensure that the grapes are picked at the optimum time. The white vinification process consists of gentle pressing of the grapes, followed by pumping the must into temperature-controlled stainless steel tanks for fermentation. The wine then matures for 6 months on its fine lees in stainless steel tanks, followed by a further 3 months in bottle. To the eye, it has an intense straw-yellow colour, enriched with light greenish hints. The bouquet is enveloping, with hints of citrus and broom, with a delicate undertone of passion fruit. On the palate, the entry is savoury and mineral, supported by a well-defined acidity and an elegant body with character. The finish has a remarkable persistence, with notes of quince and yellow peach, while the aftertaste fades into harmonious hints of aromatic herbs.
