Contrary to popular belief, rosé wine is not made from a mixture of white and red wine; there are specific techniques for making rosé wine from red grapes:

- If the red grape variety has a skin that releases a lot of colour, this is usually done by pressing the grapes directly, as with white grape vinification.

- The alternative is to macerate the skins with the must for a few hours until the must has reached the desired colour; this technique usually produces fuller, more intense rosés.

- Another widely used technique is the "salasso", which consists of taking a portion of the must from a vat in which red wine is being produced, containing both the must and the macerating skins. After a few hours of maceration, part of the must is separated and fermented in a second tank, without skins or seeds.
