Description
Tenuta Manoylo's "Peconero" is a "special edition" red wine that defies convention, a bold experiment inspired by the idea of the Pecorino grape as a 'white in red'.
This unconventional red wine is vinified according to the principles of red wine vinification, using at least 90% native Pecorino grapes, the remaining 10% of the blend being red grapes.
This "dressed white" is a truly unique product. It succeeds in bringing out the red fruit, earthy and balsamic aromas typical of red wines, while surprising the palate with the freshness, verticality and savouriness of a varietal white.
The vineyard from which the Peconero is harvested is situated on a hill, a typical landscape of the Marche region, where the vineyards are nestled among the gentle hills, with the sea on one side and the mountains in the background on the other.
The land around Borgo di Moresco is characterised by soils rich in clay, silt and limestone, the legacy of ancient marine formations.
As with the white grapes, the red grapes are harvested in the first days of September, all by hand, in order to preserve the integrity and quality of the grapes. The grapes are destemmed and crushed before fermentation in steel vats, with maceration on the skins at controlled temperatures between 15 and 20°C and with repeated pumping over to favour the extraction of the anthocyanic component of the red skins and the exaltation of the typical aromas of Pecorino. After fermentation, the wine is matured in amphoras for 2-4 months.
In the glass it has a ruby red colour with violet reflections. On the nose, the fruity notes of the red grape blend with the vibrant intensity of the Pecorino cheese to give aromas of undergrowth, currants, morello cherries and a delicate spiciness, with a final hint of sage. On the palate, the entry is warm and enveloping and continues to reveal its white soul, releasing freshness and savouriness. The tannins are silky and non-invasive, contributing to the balance and pleasantness of the drink. Served at 10°C, its freshness and liveliness are enhanced, while the tannins help to cleanse the palate, inviting you to take another sip.
A versatile wine, Peconero is perfect with seafood dishes with a strong character. It is excellent with pasta with anchovies and dried tomatoes, scampi sauces and traditional fish soups. Try it with grilled octopus. An innovative wine with a strong character.
