Description

Capsule Two sparkling wine is a pet nat, an Italian term derived from the abbreviation of petillant naturel, which in French means naturally sparkling. A refreshing label, this one from Bossanova, with a savoury, thirst-quenching sip, accompanied by aromas of crisp fruit such as peaches and apricots, and light notes of vanilla. This sparkling white wine is made from three indigenous Abruzzo grape varieties, Trebbiano d'Abruzzo, Montonico and Cococciola, cultivated on a single parcel of land in the hills of the province of Teramo, in the town of Controguerra, using biodynamic farming methods and no chemicals or synthetic substances. The vines are about 40 years old and show Nat and Andrea's commitment to the continuous search for old vines to recover for the enhancement of the territory. The grapes are harvested by hand and processed in the cellar by destemming and soft pressing. Fermentation takes place spontaneously with indigenous yeasts in cement vats, the same vats used for the short ageing. The "Capsule Two" wine is bottled with the addition of Trebbiano must, which has been frozen since the harvest, in order to allow spontaneous refermentation in the bottle, which gives it its slight effervescence. In the glass, it has a bright straw-yellow colour, with a slight haze and background presence; the bouquet expresses fruity notes of yellow-fleshed fruit, combined with hints of white flowers and citrus fruits. On the palate, it is light and lively, with a savoury, almost salty taste, with good acidity and citrus returns. It is a wine to be drunk in carefree moments, in the company of friends and with fish dishes, from starters to fried foods, it also goes well with risottos and cheeses.
