The Spumante Metodo Classico Alta Langa PN-CH, an excellence that comes to life in the hills of the province of Cuneo, tells the story of the Deltetto family through the undying passion for sparkling wine and the harmonious combination of two noble international grape varieties, Pinot Noir and Chardonnay. Antonio Deltetto's love of sparkling wines led him to start the Bubbly project in the late 1970s, and it has continued to this day thanks to his children, Carlo, Cristina and Claudia, who continue the family tradition. The result of this passion is a fine and complex wine, dry, lively to drink, with a mineral and spicy texture, suitable for both appetizers and first courses. In recent years, with the advent of the new DOCG Alta Langa, the family's sparkling wine production has moved to the high hills of Roddino, where the altitude ensures that the grapes maintain the right acidity for sparkling wine production at harvest time. Its production begins with vinification in steel tanks, where fermentation takes place at a controlled temperature of 18°C. The subsequent fermentation, according to the Metodo Classico, then in the bottle, takes place in places where the room temperature is kept constant at 14°C thanks to air conditioning. After the second fermentation, the sparkling wine remains in the bottle for at least 30 months, during which it develops complexity and refinement thanks to the presence of its own yeasts. PN-CH is a sparkling wine with a bright straw-yellow colour, a fine and persistent perlage and an enveloping aroma of bread crusts and yeast crusts, typical of the classic method, anticipating a taste sensation that will entice you to take another sip. In the mouth, it is dry, savoury and well-balanced, with a pleasant and persistent aftertaste. This quality sparkling wine is the perfect companion for an elegant aperitif, a refined choice to accompany shellfish and oysters. It pairs beautifully with first courses, adding a touch of class to any occasion.
