The Roero Arneis Riserva San Defendente produced by the Deltetto winery takes its name from the small hamlet in the hills surrounding the town of Canale, where the winery is located and which has always been the "home" of the Deltetto family. From this historic vineyard, which today enjoys the prestigious Roero geographical designation, comes the Riserva San Defente, a work of oenological art in every sense of the word, part of the "Etichette d'artista" project, which aims to bring together wine, art and culture. This limited-edition initiative is based on an important socio-cultural theme each year, and for the 2020 vintage it has been decided to support the non-profit organisation 'Observatoire du Plancton', which aims to spread knowledge of the microscopic marine and aquatic world in order to play an active role in protecting the oceans. The Arneis vineyard is situated at an altitude of over 300 metres. In this position, the vineyard enjoys excellent exposure, allowing the harvest of perfectly ripe grapes that give the wine complexity and a pronounced acidity, a crucial element for the subsequent long ageing. After manual harvesting, the grapes are taken to the cellar, where they are gently pressed and the fermentation process begins with pied de cuve in French oak barrels of second passage at a controlled temperature of 16°C. Maturation follows in the same barrels, the wine remains on the lees and weekly manual battonage is carried out for about 6 months to keep the lees in suspension. Once bottled, the wine continues to mature for at least a year. In the glass, it has a deep straw-yellow colour and a fine, intriguing and heterogeneous bouquet with notes of flowers and ripe fruit, accompanied by suggestive hydrocarbon nuances. On the palate, freshness and savouriness blend with softness and structure, creating the right balance to delight the palate. Arneis Riserva di San Defendente finds its perfect expression with refined hors d'oeuvres, creative first courses, blue fish and shellfish, completing a culinary journey wrapped in elegance and harmony.
