Walden Wine, the new creation of Cascina Belmonte, is the expression of the Manzoni Bianco grape variety. This variety was created in the 1930s by Luigi Manzoni, the famous director of the Conegliano enology school, from a cross between Rhine Riesling and Pinot Blanc. This label embodies the magic of autumn evenings, the first chill and the gastronomic pleasures that accompany autumnal dinners, with an aromatic bouquet on the nose that recalls wild flowers, hay, rosemary, aromatic herbs and dried fruit, complex references that attract attention. On the palate, it is dry, with light tannins, which are the result of the maceration technique used during vinification, and finishes with a pleasant acidity that gives freshness and dynamism to the palate. The vines are cultivated according to the Guyot training system on clay soil, using the organic method. Vinification is characterised by a 40-day fermentation maceration in amphora, followed by ageing in stainless steel tanks and then 1 year in bottle. This wine is not afraid of daring pairings and is excellent with hearty dishes typical of the pre-alpine lowlands. It is the perfect accompaniment to herbaceous flavours such as wild herb soups, fresh pasta dishes and hard mountain cheeses. In summer and spring it is a versatile companion, also perfect with grilled meats, to be enjoyed at the ideal temperature.
