Cascina Belmonte's 'Serése' wine is a tribute to spring, taking its name from the cherry tree, as it is called in the local dialect. It is a hymn to the season of fragrances, freshness, liveliness and the awakening of the senses, sensations and emotions that this wine will give you, sip by sip. Its seasons are spring and summer, this wine evokes spring with its thirst-quenching freshness and summer with its fragrant sweetness. Notes of tropical fruit, harmoniously blended with citrus sensations, fill the glass, inviting you to drink. The hills of the Valtenesi are characterised by an enormous variety of soils, due to the action of the glaciers, which were not uniform throughout the area; Serese wine is made from white Manzoni grapes, grown on clayey soils, which are cooled and washed after harvesting to reduce oxidation and contamination. After destemming and crushing, the grapes are cold pressed in the absence of oxygen. During fermentation, the temperature is controlled and selected yeasts are used. At the end of fermentation, the wine is aged for 6 months on its fine lees in stainless steel tanks. It has a pale straw-yellow colour with brilliant reflections, a bright transparency enriched by yellow and green reflections. The bouquet is exuberant, an interweaving of aromatic herbs and fruit tree flowers, reminiscent of the cherry trees from which it takes its name, fruity notes of grapefruit, pineapple with some mineral nuances. On the palate, its citrus sweetness invites you to sip it again and again, with an interplay of savoury, acidic and smooth sensations that come back like a seesaw and become the hallmark of its persistent taste and aroma. Serése is the ideal companion for freshwater fish dishes with lingering flavours and dry meats such as pike, whitefish and sardines. It also goes well with fresh cheeses such as robiola, fresh caprino and stracchino, perhaps combined with eggs, savoury pies or salami.
