Description

Aurantium is a wine made from pure Moscato bianco grapes, naturally dried on mats, grown on the Giasira estate. It is a wine that expresses all the warmth and aromas of Sicily, with intense notes of crisp fruit and nuances of Mediterranean undergrowth. The winery is located in the province of Syracuse, near the town of Rosolini, halfway between Noto and Modica, a UNESCO World Heritage Site. The vines, cultivated with great care using the Guyot method, guarantee grapes of exceptional quality, with yields of around 80 quintals per hectare. The Moscato harvest, carried out manually during the first ten days of August, is followed by drying on racks, which allows the grapes to concentrate their sugars and aromas in a natural way. Once the desired degree of drying has been reached, the grapes are gently pressed and the must obtained is fermented in temperature-controlled steel tanks. At the end of fermentation, the wine is aged in small barrels for 5 months. Aurantium is bottled for at least 3 months before release. In the glass, the wine has an intense golden yellow colour with amber reflections. To the nose, the wine opens with pleasant aromatic notes of candied citrus and yellow-fleshed fruit, enriched by the warm scent of sage. Slightly sweet on the palate due to the low residual sugar content, it is balanced by good acidity and reveals delicate notes of candied orange, dried apricot and dates. It is the ideal companion for Sicilian dry pastries and fruit tarts. It is also excellent with blue-veined or seasoned cheeses.
