Paride d'Angelo's Cerasuolo d'Abruzzo is a vibrant rosé wine made exclusively from Montepulciano d'Abruzzo grapes, embodying the rich winemaking tradition of the Abruzzo region. Deeply rooted in the history and culture of the region, this rosé is made from an autochthonous vine that originated in the Pescara area. Its intense colour, influenced by the rich anthocyanin content of the vine, is combined with a full and enveloping flavour, which leaves the glass with a crisp finish and hints of red fruit. This Cerasuolo d'Abruzzo is the ideal accompaniment for fresh and light dishes. It goes well with fish, white meat and herbs, or with fresh cheeses. There is a saying: 'Wine is made in the vineyard, not in the cellar'. This is the philosophy of Paride d'Angelo, a small family-run winery, whose aim is to work well in the countryside, respecting the basic principles of nature and organic farming, achieving very high grape quality, so that the wines are not treated in the cellar. The vineyards, located on clay soils on the hills of the Pescara hinterland, are cultivated with the traditional Abruzzo pergola system and have an average age of 45 years, testifying to a constant commitment to respect and care for the vines and the surrounding biodiversity. Vinification is carried out according to traditional methods, with spontaneous fermentation using indigenous yeasts and without the addition of sulphites. Before fermentation, the grapes are gently pressed and remain in contact with the skins for eight hours to extract the necessary amount of colour. At the end of fermentation, the Cerasuolo remains in contact with its fine lees for 6 months to complete its flavour profile, and continues its refinement in steel without lees for 3 months, then in the bottle before release. The deep cherry-pink colour shines in the glass, anticipating an enveloping sensory experience. The taste is full and intense, filling the mouth with warmth and leading to a fresh finish that expresses the vitality of the Abruzzo region. The aroma is a symphony of currants, raspberries, rose berries and a hint of cyclamen petals, giving the bouquet a floral and fruity note.
