Description

The Costellazioni rosé from Cascina Belmonte is the most characteristic wine from the western shore of Lake Garda, proudly representing the Valtènesi DOC, recently created to preserve a tradition that has been handed down from vintage to vintage for over a century. A sublime expression of our privileged territory, bathed by the waters of Italy's largest lake, which strongly influences the local climate, determining winds and rainfall and moderating the harsh Alpine winters. Costellazioni is produced exclusively from red grapes grown organically using the Guyot training system on moraine soils, with a controlled yield of 75 quintals per hectare. The attention to quality begins with the hand-picked harvest, where the grapes are cooled and washed to reduce contamination, before being de-stemmed, crushed and cold-pressed in an oxygen-free environment to reduce oxidation. The maceration time is carefully calibrated to obtain the desired colour and aroma. Fermentation is initiated with selected yeasts and, once completed, the wine remains on its fine lees, which are stirred periodically. The wine is then aged in stainless steel tanks for about 5 months to preserve the freshness and integrity of the aromatic notes. Pale pink in colour, Costellazioni is distinguished by its exceptionally fresh bouquet, with notes of citrus and ripe yellow-fleshed fruit, enhanced by flowery, enveloping nuances. On the palate, it is straightforward and fresh, enveloping the palate with its fullness, very balanced, with mineral notes on the finish. Eclectic in its pairing possibilities, it goes well with cured meats, sliced meats, white meats and fish. We can imagine it in the foreground on bright summer days, with the sparkling reflections of the waves hit by the blinding sun in the background. But we can also imagine it as the perfect accomplice on autumn evenings, elegantly accompanying a plate of freshly roasted chestnuts.
