Cantina Lecci e Brocchi's 'Passi' Passito is a true poem of the senses, an ode to the enveloping sweetness of the Sangiovese grape. Produced in the picturesque estate of Villa a Sesta in Castelnuovo Berardenga, Tuscany, this wine is the sublime expression of Sabrina and Giancarlo's dedication and love for their land and its fruits. Harvesting the fruit destined for 'Passi' is a matter of waiting and dedication. In fact, when harvesting the grapes for dry wine, some of the best grapes for drying, the sparse and small ones, are left in the vineyard to over-ripen until they are picked, which takes 2-4 weeks, depending on the climate and seasonal conditions. The selected grapes are then harvested and dried in ventilated rooms, following a natural process until the ideal parameters are reached. The dried grapes are soft pressed and vinified in stainless steel tanks at a controlled temperature (15/16°C). The must is left to ferment with the skins for a few days and then undergoes partial maceration. Once the skins are separated from the liquid, fermentation continues until a harmonious balance is reached between the alcohol and sugar content of the wine. Passi' has an intense colour, an antique pink approaching amber, a visual signature of its authenticity. The olfactory notes are a complex symphony of cooked fruit, candied fruit and honey, enhanced by the alcohol content of the wine. This sensory melody offers the palate an intense and persistent tasting experience, a journey through layers of enveloping flavours. This wine is an ideal accompaniment to desserts, but its versatility makes it equally delicious with short and medium-ripened pecorino cheeses.
