The white sparkling wine 'A Fondo' from Le Vigne di Alice, so called because of its characteristic bottle with sediment at the bottom, is the result of the traditional refermentation in the bottle and marketing as it is, with a crown cork, excluding the practice of degorgement. This method allows the A Fondo wine to be enriched with fermentation aromas and fragrant fruit aromas, and to have no residual sugar. The soil from which the grapes come is 100% Glera, the main grape variety of the area, and is part of the land owned by Cinzia Canzian, the founder of the company, and is characterised by a clayey-calcareous soil, rich in minerals, typical of the hills of the Prosecco area on the border between Veneto and Friuli Venezia Giulia. Great attention is paid to the quality of the grapes harvested, with yields ranging from 90 to 100 quintals per hectare at harvest time, usually in the second half of September. As with any sparkling wine, A Fondo requires two fermentations to produce the bubbles, and the base wine is vinified in steel tanks. At the end of the process, the wine is separated from the coarser lees and left to mature for 4 months on the finer lees. The base wine is then bottled with the addition of yeast and must for the second fermentation, avoiding the addition of exogenous sugars. "A Fondo is a sparkling wine, ready to reveal all its complexity, with a pale straw-yellow colour, characterised by the typical haze of this type of product. On the nose, it has clear notes of green apple, white peach and sweet lychee, with balsamic hints of white mint and forsythia and a delicate honeysuckle aroma. On the palate, it is savoury, smooth, well-balanced and persistent in the finish, offering an enveloping and nuanced sensory experience.
