Verdicchio dei Castelli di Jesi Classico Superiore Titillo is the latest jewel from the vineyards of Colle Jano. It is the second great success for this winery, which is dedicated to an artisan approach that respects the land and to the recovery of abandoned vineyards, restoring them to an efficient and functional form of cultivation in order to preserve and enhance a place of great importance, such as the hills of Jesi in the Marches. The white Titillo is made exclusively from Verdicchio grapes and fully reflects the character of the grape variety, with hints of crisp, ripe fruit on the nose. On the palate it is agile and decisive, vertical, with great minerality. To make Titillo, Filippo and Giulia decided to use grapes from the old vines planted in 1967 and from the new vines planted in 2017, both located in the gentle hills of Cupramontana at 250 metres above sea level. The soil, of sedimentary origin from the marine recession, is characterised by sandy loam enriched by the presence of calcareous marl, which gives the wine a distinctive minerality. The harvest begins at the end of August. The attention paid to the quality and ripeness of the grapes is demonstrated by the fact that the harvest is carried out manually, using crates, and by the very low yield of only 45 quintals of grapes per hectare. The grapes are pressed very gently and the must ferments spontaneously at a temperature of 17°C thanks to indigenous yeasts, which ensure a slow and controlled fermentation. The wine matures in steel tanks for 8 months before bottling. The straw-yellow colour has a seductive intensity, with notes of ripe yellow fruit on the nose. On the palate, the wine is open and assertive, with a high minerality, almost salty, which makes this Verdicchio fresh and crisp. Floral and dried fruit nuances, enriched by hints of aromatic herbs, add complexity to the flavour profile. An easy-drinking white wine, it can be paired with fresh cheeses, first courses based on fish, but also with pork or white meats.
