Description

The Manzoni Bianco of Zanovello Selections is an authentic expression of flavour, complexity and persistence. The vine is the Incrocio Manzoni 6.0.13 (Riesling Renano X Pinot Bianco), cultivated with passion by Zanovello since the 1980s on the slopes of Monte Venda, on deep volcanic soils rich in organic matter (marl and rhyolitic breccia) at an altitude of between 200 and 400 metres. With a yield limited to between 25 and 40 quintals per hectare, this wine is the result of an artisan process that values every detail. The grapes are harvested by hand, crushed and destemmed, and part of them is gently pressed. The other part is left to macerate in contact with the skins for three days. In both cases, fermentation takes place spontaneously, thanks to indigenous yeasts, in wood and cement, in order to preserve the authenticity of the fruit as much as possible. After two years of patient ageing in cement tanks, the wine is bottled. Zanovello's Manzoni Bianco is a wine that evolves with time, with intense aromas of citrus and crisp white pulp fruit, enriched with mineral notes and light hydrocarbon touches typical of the variety. The mouth is full and persistent, with an excellent balance between acidity and sweetness. Expressive and full-bodied, it is the ideal accompaniment to baked turbot and potatoes, crudités and stuffed pasta. It is also perfect with medium mature cheeses.
