Renata and Alberto have a clear vision: to create high quality wines, carefully calibrated in response to the variables of grape variety and climate. From the beginning, their mission has guided the selection of the varieties to be planted in each vineyard, a careful choice that reflects the extensive technical knowledge gained from thirty years of experience. In this context, the roots of Austro-Hungarian, French and Friulian traditions, which found fertile ground in the Isonzo area, were skilfully integrated. This blend of influences has helped to create distinctive wines with character, expressing the full potential of each of the varieties grown on its sites. Refosco is the result of a skilful blend of three crus, each of which is harvested and vinified separately. Although the grapes from the three crus are genetically identical, they are very different due to the differences in the terroir. Some Crus produce berries rich in fine fruity aromas and lacking in tannins, others have denser and more concentrated berries with acidic tannins, and still others produce berries with ripe tannins and deep fruit. After harvesting, the musts are left to ferment with the skins for about 18 days at a controlled temperature of 20°C, with manual punching down if necessary. This practice consists of applying pressure to the pomace on the surface of the must, using a special instrument, in order to stir it. The ageing process is made to measure, with the selection of woods and toasts appropriate to each organoleptic result, and the final blending takes place a month before bottling. In the glass, Refosco has an intense and brilliant ruby red colour. To the nose, it is intensely fresh, with deep notes of mulberry, blueberry and blackcurrant, in harmony with balsamic notes, enriched with enveloping nuances of black pepper and clove. On the palate, the wine is characterised by an enveloping tannic texture, soft and silky, balanced by a significant acidity that gives it a remarkable degree of freshness and drinkability, character and personality. The finish is a harmonious symphony of persistence and elegance, with pleasant resonances of balsamic and herbal notes.
