Description

Teolis is an expression of the terroir, it is precise, vertical and inviting to the palate with a savoury, full and enveloping finish, offering a complex and satisfying sensory experience. From an aromatic point of view, the wine is complex, opening with the classic fruity and herbaceous scents that characterise the vine. This wine comes from the vineyard of the same name, located in the municipality of Moraro, on soil that is slightly more robust than the average for the Isonzo plain. It has a higher percentage of fine-grained fractions such as silt and clay on the surface and dolomitic limestone below 90 cm, which gives the vine a slower vegetative start and a greater intrinsic water supply. Man decides very little. Once he has chosen the site and the grape variety, all he has to do is respect the will of nature and allow it to express itself. This is the philosophy of Alberto and Renata, who carry out all the work in the vineyard All the work in the vineyard is done by hand, to give the best response to the vegetative balance of the plant. The Sauvignon Blanc is cultivated using the spurred cordon system, with a yield of 70 quintals per hectare. The grapes are harvested by hand, as is the case with all our wines, and vinification begins with cold maceration, which consists of keeping the skins in contact with the must for a variable period of time in order to extract aromatic and protective substances from the skins. Once the skins have been separated, fermentation takes place at a low temperature of around 15°C. The wine matures on the fine lees in steel tanks until the end of July, which guarantees the release of protective substances that reduce the amount of sulphites added.
