Description
The sparkling wine “Pumie” is Baglio Diar’s ancestral method wine: a fizz of great drinkability and freshness, lively and with a strong sense of place. The name comes from the Sicilian dialect word “Pumu”, meaning apple, while “Pumie” is a coined word inspired by the winery’s first ancestral method wine, “Lumìe”, a perfect nod to the delicate notes of red apple and the vibrant acidity that characterise this charming sparkling wine made from 100% Nocera. The ancestral method is a style of sparkling wine with very ancient roots, and it can be considered the origin of modern sparkling wines.
This rosé comes from Nocera vineyards in Mazara del Vallo, in south-western Sicily. The climate, with mild winters, hot summers and a pleasant sea breeze, together with mainly sandy soils, creates ideal conditions for viticulture that preserves freshness and balance. The vines, trained on vertical trellises and Guyot-pruned, are harvested during the nights of the second week of September, when cooler temperatures help preserve the aromatic integrity and natural acidity of the grapes.
After very gentle pressing, fermentation takes place at a controlled temperature of 13°C and is stopped by chilling. The wine is then bottled while still partially fermented and naturally completes its fermentation in the bottle, according to the principles of the ancestral method. It is then aged for at least 5 months before release.
In the glass, Pumie shows an intense pale pink with violet highlights. On the nose it opens with delicate aromas of ripe red apple and raspberry, accompanied by fragrant notes of rose. The palate is fresh and lively, led at first by citrus sensations of pink grapefruit and lime, which give way to light hints of basil. The delicate effervescence and vibrant acidity make this wine dynamic, smooth and irresistible from the very first sip.
