Description
The white “Diornu” from the Baglio Diar winery is a wine with a Sicilian soul, made from 100% Inzolia, a native variety. The name “Diornu” means “during the day” in Sicilian dialect: a white that is ideal for those who enjoy dry, light, easy-drinking wines with delicate aromas of fruit and spring flowers. We are in south-western Sicily, a unique area where winemaking tradition meets the beauty of the landscape, with vineyards just a stone’s throw from the sea, between the towns of Trapani and Marsala. The vines grow on medium-textured soil, in a climate of mild winters and hot summers caressed by a constant sea breeze that keeps the grapes fresh and healthy. The Inzolia is harvested in the last ten days of the month, with all operations carried out by hand. In the winery, after very gentle pressing, the must ferments in stainless steel tanks at a controlled temperature of 15°C. The wine is then aged, again in stainless steel, for three months, followed by at least one month of rest in bottle before release. In the glass the wine is a bright straw yellow with greenish highlights. On the nose it opens with delicate aromas of ripe apple, fennel, mint and jasmine. On the palate it is nimble, with lively acidity, light in structure and savoury, with a moderately long finish enriched by pleasant notes of lime. Ideal with savoury dishes without tomato, it pairs perfectly with white meat and fresh or medium-aged cheeses, enhancing every mouthful with its Mediterranean freshness.
