Description
Filodivino's “Coccio” is a skin-macerated white made from pure Verdicchio. It is a label that reflects a bold and deliberate approach: not all white grapes lend themselves to this type of winemaking, but Verdicchio, thanks to its structure and complexity, expresses itself surprisingly well through skin maceration too. Coccio is a modern wine born from an ancient technique, with a full, well-balanced palate and the minerality typical of the Marche terroir. As with the riserva, bunches are selected from the oldest vineyards, around 60 years old, with vines facing north and south on different slopes of the same hill. All the vines are farmed organically, with particular attention to yields, which are always kept very low, no more than 60 quintals of grapes per hectare. The harvest is always by hand, in small crates that are stored overnight in a cold room before processing. The following day the grapes are destemmed and pressed, and the must ferments in Tava terracotta amphorae with around 50% of the skins, destemmed by hand, macerating. The skins remain in the wine throughout ageing, for as long as twelve or nine months depending on the vintage, until bottling, without filtration. In the glass it shows a deep, rich yellow colour. The bouquet is rich and original, with notes of orange peel, camphor flowers and mimosa. The palate is broad and structured, yet balanced and harmonious, with a light, almost imperceptible yet present and persistent tannic texture that accompanies the sip and defines its character.
