Riesling Renano "Firmamento" Cascina Belmonte

The white wine 'Firmamento' from Cascina Belmonte has its roots in 2014, a year marked by a cool summer that produced grapes with a particularly high acidity and low alcohol content. This phenomenon was accentuated in a vineyard that is the least exposed to the sun of the entire estate, but which at night offers an extraordinary view of the firmament, hence the name. Cascina Belmonte adopts a minimalist oenological approach, aware that any intervention is superfluous or excessive when the grapes, the fruit of a coherent thought, establish an authentic link between the land, the vintage and the idea of an authentic wine. In keeping with this philosophy, they decided not to alter the unique characteristics of the Rhine Riesling grape, but to enhance its essence. They balanced the wine's natural acidity by leaving a small amount of unfermented sugar, making the wine softer and rounder. In the following years, our efforts in the vineyard were focused on cultivating grapes with specific chemical and physical characteristics in order to obtain an extremely fresh wine with a low alcohol content. This Riesling reveals itself immediately with very fresh and persuasive aromas, a feminine, immediate wine with seductive floral aromas in harmony with tropical fruit and citrus notes. On the palate, the fruity and mineral notes blend harmoniously, balanced by a round structure and excellent freshness. The elegant acidity perfectly complements the sweetness and the intense minerality, leading to a harmonious finish. The grapes come from Guyot vineyards on clay soils and are gently pressed after harvest and fermented in steel tanks with selected yeasts. Maturation, also in stainless steel, lasts for 6 months and gives the wine an exceptional freshness, ideal with fish and shellfish dishes, but also with vegetarian dishes and fresh cheeses.
