Description
The sweet red wine “Bricat” made by the Giuseppe Bordone winery comes from the small hill near the estate known as "Bricat", which gives the wine its name. It is an authentic expression of the Roero and reflects the unique character of the terroir it comes from: this wine is in fact a blend of aromatic grape varieties native to the area, which release relaxing fruity and floral notes, while the residual sugar lends softness and elegance; a sinuous, charming wine with a distinctive personality.
The grapes come from Guyot-trained vines growing on ochre-coloured soils, owing to the high content of sand and marine fossil remains, traces of which can still be found today. After destemming and crushing, fermentation takes place in stainless steel tanks at a controlled temperature of around 18°C and is stopped when the wine reaches 10% alcohol by lowering the temperature to 0°C, thus retaining a fair amount of sugar in the wine. The wine then matures in stainless steel for about 2 months at a very low temperature, around 0°C, to prevent any risk of fermentation restarting due to the unfermented sugars it contains.
With a pale red colour verging on rosé, this wine has a delicate nose with floral notes of rose and violet. On the palate it is fruity, with a sweet attack resulting from the light residual sugar, which gives the wine a unique softness and delicacy; the finish is dry and never cloying.
The ideal pairing for this wine is with dry pastries in general, especially those made with hazelnuts and almonds, and paste di meliga biscuits. A sensory experience that celebrates elegance and refinement.
